Eli explains the superpowers of kelp, and how he has found hope for the future through his research. Eli Wheat is an Assistant Teaching Professor in the Environmental Studies program and a core faculty member in the Food Systems Nutrition and Health Program. He was awarded the College of the Environment’s Outstanding Teaching award in 2017 and the Excellence in Teaching Award in 2010. Eli’s teaching and research focus on food systems and sustainability. He is currently working on research projects involving carbon sequestration, kelp production, and pasture management. Aside from his work teaching, Eli actively pursues a passion for food production. He also owns and operates SkyRoot farm, a 20-acre certified organic farm that integrates livestock and vegetable production on South Whidbey Island. Eli actively manages SkyRoot farm using principles of regenerative agriculture, with the goal of growing food while sequestering as much carbon as possible and meeting the economic demands of the production system.
